From fermented food to living soil

In 2017, I started Scotty's Fermented Foods, a business making and selling fermented foods. Running that business led me to ask a simple question: what makes vegetables genuinely nutrient-dense?

That question brought me into the world of regenerative agriculture and living soil. As I studied the subject, I discovered the work of agricultural writer Sir Albert Howard and his approach to sheet composting: applying organic material directly to the land where it will break down and build soil.

The idea made immediate sense to me. Instead of treating food waste and manure as disposal problems, we can keep those nutrients local and put them to work on farms and ranches.

That insight became OnFarmCompost.

Today, I work with small farmers and ranchers to help them begin sheet composting. We provide practical guidance and provide them with locally collected food waste and animal manure that can be used to build healthier, more resilient soil.

My goal is straightforward: keep nutrients close to where they are produced, reduce unnecessary waste, and give Texas farmers practical tools to improve their land.
